Sometimes, I still go the entire morning without eating breakfast. Drinking coffee can definitely stave your hunger (which is the normal routine for me). Narrow Spaces

I went from living in 950 square feet to a meager 504 this past spring. It’s amazing how quickly you can learn how to use every inch of space for storage. Living with narrow spaces and very little square footage makes every inch of floor invaluable. Especially when you’re number one enemy is clutter! I try my best to keep storage against walls, in small nooks, and up high- mostly to avoid that claustrophobic elevator-esque feeling.

Gluten-Free Potato Bread

Sweet & Substantial

As I searched for a gluten-free sandwich bread recipe online, I found this one. By appearances, it looked PERFECT! But I should have known better. The bread was delicious, don’t get me wrong, but it was definitely not regular sandwich bread! Much closer to a potato bread, possibly more dense (haven’t had potato bread in a long time). It’s on the sweeter side, so if you don’t like sweet breads, you can cut the sugar down to just 1 tablespoon. I had my mom taste test this one, and she absolutely LOVED it. Pretty impressive, considering this is someone who eats “regular” food, like glutenous and dairy filled foods.

After attempting way too many tortilla recipes that all claimed to be bendable and easy-to-make, I was close to taking a break from my experimenting. Some recipes had as many as 5 different types of flours! That was a little much for me. I’m used to bread recipes being that intricate, but that’s BREAD! Tortillas shouldn’t be so complex, right?

The Search

Since going gluten and dairy-free, I’ve gone through countless recipes that claimed to be the ultimate sandwich bread. They were not. Not even close! Most of the breads would crumble easily and were way too dense. They also HAD to be toasted, otherwise the bread was inedible. Sometimes there’s no time to toast bread.
