Banana Chocolate Chip Oat Bars

Chewy, chocolatey, oat-filled goodness ready in 25 minutes. Perfect for breakfast on the go, or even a snack. These will disappear FAST!

Last Minute Change

I initially wanted to make banana bread, since my husband (did I mention we eloped this past summer?) really wanted me to make some. In my searches for an awesome recipe, I came across this one for bars instead. It looked WAY more appealing than your average banana bread, and I was seriously craving some chocolate. There was no contest. This is the original recipe, from which I modified and added a few items.

The Skinny

These bars come out with plenty of moisture and that sweet goodness that tastes like a dessert, but could still pass as breakfast. The first step is grinding the oats in a food processor- if you have oat flour on hand, even better! Just use flour instead of the oats. I haven’t invested in oat flour yet, mostly because it tends to be a more pricey flour.

Next, I pureed the bananas in my food processor. You can definitely skip this step if you don’t mind chunkier bits of banana. Now throw together all dry ingredients, then the wet ingredients- all in ONE bowl! And BAM, you’re ready to bake! So simple, right?

Cook Time

Prep: 10 mins             ♦            Cook: 20 mins             ♦             Ready: 45  mins

Yields: 9 servings

Ingredients

· 2 1/4 cups gluten free oats
· 1/2 teaspoon baking powder
· 1/2 teaspoon baking soda
· 1/4 teaspoon salt
· 1 1/2 teaspoons cinnamon
· 1 tablespoon flax meal (optional)
· 3 ripe bananas
· 1 teaspoon vanilla extract
· 1/4 cup oil (I used olive oil)
· 1/4 honey (or sugar)
· 1/4 cup chocolate chips (I used Enjoy Life minis: dairy, gluten + tree nut-free)

Step 1

Preheat oven to 350° F. You’ll have plenty of time to prep the batter while the oven warms up. Use a food processor to grind the oats down to flour. Or skip this step entirely, and use oat flour!

Step 2

Mix all of the dry ingredients (oats, baking powder, baking soda, salt, cinnamon, flax meal) together, except the chocolate chips.

Step 3

Mash the bananas. I chose to puree them in the food processor, but you can also use a potato masher or wooden spoon!

Step 4

Combine the wet ingredients to the bowl of dry ingredients. Mix until it looks uniform in color and texture.

Step 5

Fold in the chocolate chips. Stir until just mixed, don’t over-mix! The chips may start melting if this happens. This would make the bars look more on the muddy side.

Step 6

Pour batter into a greased 9″ x 9″ pan. Smooth the top with a wet spatula. Bake for 20 – 25 minutes.

Remove from oven when the top is golden brown, and an inserted toothpick comes out clean.

Finit

Place the pan on a cooling rack, and let sit for 15 – 20 minutes.

The best way to cut almost any bar or brownie is with a plastic knife. It’s less likely to stick and make the edges crack as you cut. Enjoy! I know I did!
