Sometimes, I still go the entire morning without eating breakfast. Drinking coffee can definitely stave your hunger (which is the normal routine for me). It’ll be 1pm, and I’m so hungry I could eat a whole cow. Thankfully, I have found one solution to the lackluster breakfast dilemma. These little nuggets of deliciousness are packed with plenty of fiber, protein, vitamins and minerals to keep you fueled all morning.
Salty vs Sweet
I will always go for a salty breakfast over a sweet one. Occasionally, I do make pancakes or french toast. But those days are few and far between. This to-go quiche is essential for those of you who prefer a savory breakfast. Only a dozen ingredients, and super easy to make!
Sweet & Substantial
As I searched for a gluten-free sandwich bread recipe online, I found this one. By appearances, it looked PERFECT! But I should have known better. The bread was delicious, don’t get me wrong, but it was definitely not regular sandwich bread! Much closer to a potato bread, possibly more dense (haven’t had potato bread in a long time). It’s on the sweeter side, so if you don’t like sweet breads, you can cut the sugar down to just 1 tablespoon. I had my mom taste test this one, and she absolutely LOVED it. Pretty impressive, considering this is someone who eats “regular” food, like glutenous and dairy filled foods.
Since going gluten and dairy-free, I’ve gone through countless recipes that claimed to be the ultimate sandwich bread. They were not. Not even close! Most of the breads would crumble easily and were way too dense. They also HAD to be toasted, otherwise the bread was inedible. Sometimes there’s no time to toast bread.
Believe it or not, these are gluten and dairy free! They taste just like a typical wheat-flour sugar cookie. Buttery and soft, like a sugar cookie SHOULD be!
